 Homemade Ice Cream Cake

Ingredients:

For the cake layers:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the ice cream layers:

  • 1.5 quarts (about 1.4 liters) of your favorite ice cream flavors (e.g., chocolate, vanilla, strawberry), slightly softened

For the frosting:

  • 2 cups heavy cream, cold
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract






Instructions:


  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined.

  4. Stir in the boiling water slowly. The batter will be thin. Pour the batter evenly into the prepared cake pans.

  5. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

  6. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

  7. Once the cakes are completely cooled, take one cake layer and place it on a serving plate or cake stand.

  8. Spread one flavor of softened ice cream (about 3/4 to 1 inch thick) over the cake layer. Smooth it out with a spatula.

  9. Place the second cake layer on top of the ice cream layer.

  10. Spread another flavor of softened ice cream (about 3/4 to 1 inch thick) over the second cake layer.

  11. Cover the entire ice cream cake with plastic wrap and place it in the freezer to set for at least 4 hours or overnight.

  12. Before serving, prepare the whipped cream frosting. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  13. Take the ice cream cake out of the freezer and frost the top and sides with the whipped cream.

  14. You can decorate the cake with chocolate shavings, sprinkles, or any other toppings you prefer.

  15. Place the frosted ice cream cake back in the freezer for about 30 minutes to set the whipped cream.

  16. Once the cake is fully set, it's ready to be served! Slice and enjoy your delicious homemade ice cream cake.

Note: You can customize this ice cream cake with different ice cream flavors, add layers of fudge sauce, caramel, or cookie crumbs between the cake layers, and get creative with the frosting and toppings!
